Herbes de Provence is a blend of dried herbs traditionally used in French and Mediterranean cooking. Originally from the southeastern region of France known as Provence, the mixture was made using herbs locals could easily pick. The herb blend was popular at a time when the spices mostly came from Asia and were expensive to get!

Herbes de Provence are a seasoning blend that features aromatic herbs from southern France and which often show up in that regions cuisine. The ratio of each herb varies according to the cooks preference.

Traditional Herbes de Provence blends typically include oregano, savory, and basil to go with the blends most distinctive component: lavender flowers.

Herbes de Provence is notable for the inclusion of lavender flowers, which was not an ingredient in the classic version; the Provence region is famous for its lavender, so the flower was added to make the blend more appealing to tourists.

Herbes de Provence are used to flavour grilled foods such as fish and meat, as well as vegetable stews. The mixture can be added to foods before, during, or after cooking or mixed with cooking oil prior to cooking so as to infuse the flavour into the cooked food. They can also be sprinkled on raw foods such as vinaigrettes, salads or fresh cheese.
